Shrimp scampi is one of those meals you can throw together in no time and it tastes like you have been in the kitchen all day! I made this for our Sunday night dinner and it was a hit. I hope you enjoy it as much as we did.
- 10 mushrooms
- 5 garlic cloves
- 15 cherry tomatoes
- 1 pound pealed and devained shrimp
- 1/2 bunch parsley
- 1 small lemon
- 4 TBSP butter
- 3 TBSP olive oil
- 2 tsp peprika
- 1 tsp garlic powder
- 2 large zucchini
1. thaw and peel shrimp.
2. chop vegetables.
3. dry shrimp with paper towels.
4. in a bowl add shrimp, paprika, garlic powder and a pinch of salt and pepper.
5. heat a cast iron skillet on high, add 1 tbsp. of olive oil
6. cook the shrimp for 1 1/2 min. per side.
7. when shrimp is done remove from the pan and add vegetables, garlic, juice from 1 lemon, and the rest of the butter and olive oil. If you like spice you can add some chili flakes.
8. when the mushrooms are soft turn the pan off and add the shrimp back in and add salt and pepper to taste.
9. serve on top of zucchini noodles, spaghetti squash or any other noodle you like?
