Seriously these are sooo good!

I came up with this recipe during a round of whole 30. After a few days you start to crave carbs and these are perfect.

 

Whole 30 potato skins

This is one of my favorite whole 30 meals. Sometimes you just need some carbs and this hits the spot! 

Ingredients

  • 5 baked potatoes
  • 1/2 pound asparagus
  • 1 small red onion
  • 2 tomatoes
  • Green onions
  • 1 pound of bacon
  • 2 ripe avocados
  • Olive oil
  • Salt and pepper

Instructions

  1. First bake the potatoes at 350 until soft. While the potatoes are cooking fry up that yummy bacon, and chop the green onions, and tomatoes. Cut the asparagus into 1 inch pieces and thinly slice the red onion. When the potatoes are done take them out and cut them in half. Scoop most of the potato out and save that for some mashed potatoes or potato cakes. Line the potatoe halves on a sheet pan, put the asparagus and red onion on top and brush with olive oil and sprinkle with salt and pepper. Bake until the asparagus is tender. Remove from the oven and Top with bacon, avocado, tomato and green onions.
